I've recently discovered video watching as a great way to learn new words, and other stuff you can't get just by listening and reading. Where is the best place for French videos with French subtitles, that are above young kid level?

Many programmes produced by French television channels have subtitles. I don't know which of the content is available to you in the United States, but I have been able to watch programming produced by French TV on holiday in Sweden without going through proxy servers.

In Canada, all the English and French TV stations are available with captions. All you have to do is press the
CC button on your TV remote unless you have an old TV without the CC feature.
You may be able to find some of the same shows on TV uploaded on YouTube or other video sites with
captions & subtitles. I can get a lot of programs in Mandarin online with Chinese captions. The movies that I
buy on DVD will say "Version française incluse". Many of the Hollywood features on DVD have Spanish &
French versions including dialog and subtitles in French you can turn on.

Hello, I would recommand french in action in youtube.
I am afraid it has no subtitles but it is not going to be a problem, the series is designed to teach french, so a few
sentences in English mentioning the topic and the rest is in french. It may be scary at first but you would be
surprised from how much you can learn and understand, 52 episodes of french spoken, with a nerative and
regarding all aspects of life in france and french.
The only problem is that it is quite old, but it would give you a lot, I used it a few years ago.
Another thing is that the first video is in 3 parts in youtube because of copyrights issues, the rest is in one part.

I don't know how subtitle files work, but I was able to find Spanish subtitles for Spanish films, so maybe you can find French subtitles for French films as well:

Had a look through those. They are mostly sub-titles for English language movies with translations. One which interested me the most was the Tv-Subtitles, but again it was French subtitles for English language TV.
Would you know of anywhere to get French sub-titles for French TV? Like for example Mafioso le clan?

I don't know where you can find French subtitles for Mafiosa The Clan neither for French TV channels.
There are some French subtitles for French series here
