I did not see anyone mention Pablo Alboran. That guy is amazing... some of the most romantic lyrics I have ever heard.

A band I'm enjoying quite a bit recently is Envidia Kotxina, an anarcho-punk group from
Madrid. An example (not their usual tone, but good nonetheless):
Polka Miseria

I enjoy Manu Chao, especially his first two soloist albums.
He's a gifted musician and deals with political/social themes.
His lyrics are quite easy to understand too.

More input. For the rock/metal fans, try to find something by La Fuga or Mägo de Oz. Both Spanish bands whose popularity - and hair - was biggest in the 90s and 2000s.
For great folk songwriting and interesting lyrics try the famous Cuban trovador, Silvio Rodríguez. His song Ojalá is quite beautiful and also a great way to study the subjunctive!
