Well if we're talking about Great Books as in the professor's suggested "Great Books education," then it doesn't mean Really Good Book. It has more to do with the book's place in the literary canon of the language/culture/world than it does with how much you like it, or even how skillfully it's written.
But to give an answer in the spirit of the previous posts, I think a work of literature is really good and really important if it changes people's viewpoints, as LanguageSponge said.
