Depends how you use them. If you use them as Assimil recommend, it would be tricky. Use
them any other way/custom, you might do ok

It should be fine; I've used more than two Assimil courses in parallel before. As long as you have the time available and don't find yourself getting confused, I don't see a problem.

How did you use them in parallel? It is also interesting for me how to learn to languages using two Assimil courses.
