Oberst Redl and Mephisto. Hungarian-directed films but German soundtrack, though some actors are clearly dubbed.
Europa Europa is good, but some of the dialogue is in Polish and Russian.

There's a whole bunch of Türkisch für Anfänger episodes on youtube. It isn't very difficult to understand, but in some parts they talk just a bit too fast for my ears.

I absolutely agree. Another good film I have not yet seen mentioned here is Stalingrad, but keep in mind one should probably be interested in WWII or at least war films in general in order to really appreciate it.

If you like more artistic films, Werner Herzog is a brilliant director. Aguirre, der Zorn Gottes was already mentioned, and I would also recommend:
Jeder fuer sich und Gott gegen alle
Herz aus Glas
Stroszek
Nosferatu
Fitzcarraldo
These films have for the most part very clear and not-too-complicated German.
