I wouldn't worry so much about the "Am I boring you?" aspect, especially if it's only a minute or two. People listening to it will be going there to give you feedback on your Spanish, so the most important thing will be to actually give them something to give feedback on. Also, i think talking about your hobbies or something that actually interests you will keep people's attention much better than a monotone reading of a news story. And who knows? You might also meet a Spanish speaker or two who share your interests.
I agree that conversations are really ideal and much easier to do than just talking to a computer screen. But if you're going to talk about something, it might as well be something you've actually got something to say about. Another option is just to record a Skype conversation.

Don't worry about not giving cerf estimates, those are just one of the various ways to
describe your skills and perhaps a little bit overestimated one among us these days ;-)
And don't worry about boring people either. Most people following vlogs of language
learners are not likely to be bored by your topics and the others are free not to watch.

Acabo de mirar Abandonar el planeta Tierra, un documental de NatGeo que dura una hora y media. Como un fan de ciencia ficción, me gustaba este video y lo recomendaría si tienes flexibilidad en lo que puedes "creer". :)
Las voces de los entrevistados, quienes hablan inglés, están un poco fuertes en comparación a las del doblados. Me distraían de vez en cuando, pero a pesar de eso, fue una hora y media de práctica de español que me lo encontraba entretenido.
* ¿o quizás "ruidosas"?
