For the humanistic polyglot, I'd say
English
French
Italian
Latin
Attic Greek (with knowledge of the Epic and Koine dialects)
German
Russian
Based on the literary giants of the modern and ancient worlds. For the worldly polyglot:
English (most of the world)
Spanish (Latin America)
Mandarin Chinese (China)
Standard Arabic (the Muslim world)
French (North, Central, and West Africa, France)
German (Central and Eastern Europe)
I know I'm leaving out some areas (most notably Russia, but as I understand it, a lot of people in former Communist countries resent Russia and much prefer German as a second language if they don't know English -- can anyonne confirm?) but the above should give you most of the world.

Oops! For some reason I'd counted German, which is unlikely to be considered an official language considering how and why the UN was formed.

I omit English, since dang near everyone in the world speaks it anyway (even Americans).

French, Spanish, Russian, Chinese, Arabic and English are the 6 official languages of the United Nations. Got this from the official United Nations website, so it must be right.
For a "true polyglot" what ever we´re saying that means, I would add German, Japanese and Hindi.

"Useful" is a subjective term. For me, Korean is more "useful" than French or Spanish. I say, pick your languages and know them well.
But I know what you're trying to ask, so I'll go ahead and say what I think a polyglot master should have:
Mandarin
Inuktitut
Finnish (or Estonian)
Swahili
Aramaic
If anyone masters those languages in a lifetime you're a polyglot in my books!

Do you think you could have found any harder languages? These are far too easy :)
Maybe you could add the "click" languages of Africa to the list.

Well, not to put anyone down for studying such languages, but I'd have to say the 'wussy' languages are highly consistent, artificial languages. Of course, Esperanto will be the leader here, though I don't doubt it's usefulness for a second, and I will definently learn it myself someday
Another 'non-wuss' language would have to be 'cherokee' IIRC.
