I would probably grab a huge armful of whatever I could grab and run away whilst blowing
out the flames.
I wouldn't be able to choose just ONE, though.
And yea, who keeps all of their language materials on one shelf? I have... a shelf and a
half (usually more. I just mowed my language collection today to make room for more),
plus the four books that I'm using at the moment.
Ehh... yeah, these thoughts are not pleasant... I think I'm going to start hiding my
language materials all over the house... Easy Thai would make a good doilie, I think...

I wouldn't need to worry much if my computer is burning down, since every language learning file is backed up on an external drive. It would be a shame to lose my great laptop, though.
If it was both my external drive and my laptop burning, I would say Wenlin Software for Learning Chinese.

Since I store my language learning books in different places, then I don't know actually how to answer. Actually I would risk my health to get at least one book from each language. But I would have to choose between "Arabic: An essential grammar", my big French dictionary or my first ever Swedish textbook.
