Since I work in a classroom environment, I use traditional commercial materials or things developed in-house. I particularly like the books by Que international of France. They have an enormous catalogue of materials for French.
For self-study I really couldn't recommend anything because I've never used the stuff myself. Interestingly enough, the Rosetta Stone software--that people here detest with a passion--is very popular in the school system. I just saw a Youtube video of Steve Kaufman and Luca the Italian polyglot have a conversation in 8 languages sequentially. What really impressed me was that they had a real conversation instead of the usual talking heads that we usually see. I didn't count the number of words that they used in each language but it certainly wasn't in the thousands. The French and Spanish sounded quite good to my ears.
