Empyrium has a neofolkish German-language album entitled "Weiland" out. Not entirely to my tastes, but it's decent for background music.

Epica is a symphonic metal band that sometimes has black metal vocals thrown in
They have a lot of Latin in their songs which gives it a rather ominous Carmina
Burana/Damien Omen sound.
Nightwish (symphonic power metal) has some songs in Finnish, not enough sadly.
Leaves Eyes (symphonic metal) has some songs in Norwegian and I think German. They are
all beautiful melodic pieces though, not their harder stuff. But I think you'ld
have to be dead to not get goosebumps listening to this stuff

The Norwegian band Glittertind has clean vocals in all of their songs, meaning you can clearly understand the Norwegian vocals. They're folk metal and definitely worth checking out!

I'm sensing a theme here: most of the bands who choose to sing in their own language also happen to play folk metal. Not exactly my thing, but that's mainly for lack of exposure. I'll have to look at all those Polish bands, looks more my thing. Also, I didn't know Behemoth were Polish...

I find the lack of Burzum, Darkthrone (Transylvanian Hunger), and Enslaved (Hordanes Land and Vikingligr Veldi) in this thread disturbing...

I wasn't aware that Darkthrone did non-English lyrics. I've got Burzum-Aske, which is unfortunately all English, but I'll look at his Norwegian stuff too... I just find it slightly creepy listening to a neo-Nazi Murderer...

No one has mentioned Dimmu Borgir or Satyricon! I know Satyricon is Norwegian black metal and Dimmu Borgir is Norwegian black metal as well. Look for "Stormblast" from Dimmu Borgir and any of Satyricon's older cds. Actually, Satyricon may be Finnish. At least some songs. Look at "Skygeddans" and "Forhekset" for songs.
