Jeanne Moreau is one of the best actresses EVER and good films to start with are Ascenseur pour l'échafaud (1958) and Le journal d'une femme de chambre (1964).

My two personal favorites from the Nouvelle Vague are Les bonnes femmes (1960) and Lola (1961).

I liked Les deux Anglaises et le continent (1971), and you have to see a film with Jean-Pierre Léaud at some point anyway. :)

Oh, and Belle de Jour (1967) is the film that got me interested in French cinema and made me want to learn French. Catherine Deneuve is perfect there.
