This is a so-called "adverbial genitive", which is used for indicating time. It is mainly found in fixed expressions like "eines Tages" or "eines Abends":

Eines Tages kam mich mein Bruder besuchen. = One day, my brother came to visit me.
Eines Abends ging die Tür auf und mein Freund kam herein. = One evening, the door opened and my friend entered.
Eines Nachts schlichen drei Gestalten ums Haus. = One night, three figures sneaked around the house.

Can we also use adverbial genitiv like:
Spater jeneres Tages = Later that day
or
Früher jeneres Tages = Earlier that day

No, as I said, "eines Tages" is a fixed expression that cannot be used with "dieser" or "jener". In order to say "earlier/later that day", use "früher/später an diesem Tag".

Furthermore, "jener" is a rather archaic pronoun and only used in writing. It's not commonly used in modern German. However, the masculine genitive is "jenes", not "jeneres".
