Hi :-)
Any suggestions on good resources to learn Portuguese from scratch? (I'm Italian but
I think I can manage with an English or Spanish - based one).

Welcome to the forum, little255! You don't mention which variety of Portuguese you want to learn. Brazilian, Iberian and African Portuguese are the same language but have great variation in everyday speech, pronunciation and grammar.
If it's Iberian (Portugal/Africa) you're after- the O Novo Português Sem Fronteiras series from Lidel publishing in Portugal is a 3 part book with audio CD's, monolingual Portuguese base, course for foreigners. The Centro Virtual Camões has a really cool beginning reading series with audio about the Portuguese Explorers and Kings, along with a lot of activities and resources for learning the language to supplement whatever course you may do.
I would avoid English-base courses since you are Italian and already speak Spanish and French. The grammar and structure is familiar to you in a way that it isn't for English-speaking beginners. Assimil have a couple of courses with French/Spanish/Italian bases for both European and Brazilian Portuguese.
If you are really interested in taking Portuguese as far as you can, let me know. I have more recommendations for that.

I had a great experience with the German-based Brazilian Portuguese Assimil course. So
assuming that:
(a) the course is similar regardless of base language
(b) you're interested in Brazilian Portuguese
I would recommend the Italian-based Assimil course.
It seems likely that the European Portuguese Assimil course is good as well, but I don't
have first hand experience with that.

thank you all for your suggestions, I'll definitely look into what you suggested :-)
I'm really not sure which variety I'm after yet, I guess there is more of a difference
between the Brazilian and the European / African variety than there is between
peninsular
and Latin American Spanish, is that so? I did study pensinsular Spanish but I've never
had any problem understanding written or spoken Latin American Spanish.
Perhaps I'll just check the materials you suggested and decide which ones suit me best.
Did anyone also used Pimsleur for Portoguese? Is it any good?

My friend used Pimsleur for Portuguese and the accents sounded good from what I heard. He
didn't make any progress, but frankly he wasn't committed at all.
I've also listened to some of the Michel Thomas European Portuguese course, and if you
like Michel Thomas I think you'll like it. Apparently they discuss some of the
differences in Brazilian Portuguese towards the end.
I have the sense that it's easier for someone fluent in European Portuguese to understand
the Brazilian variant than the other way around, so if I didn't have any personal
connection I probably would have picked European. Although if I hadn't had any personal
connection I probably wouldn't have made it very far...
