The original lingua franca, a mixture of Romance languages and Arabic, was in wide use during the Crusades, and something like it, called sabir, was once common among Mediterranean sailors.

I don't think the term "creole" has been clearly defined linguistically...its like "dialect" and other ambiguous words.
