For example, if I have a PDF of a novel is there such a program that I can insert the PDF and give me a word count? Even if it is only counting word families such as walk, walking, walker, walked, etc belonging to the same family.

You can use calibre (not sure if the stand-alone version does it or if you need a plugin
for it ... google for "calibre wordcount").
And of course it has to be a text-pdf, not scanned images ;)
But this counts all word tokens, ie. you get the length of the text in words. If you only
want to count the number of unique words, you need to export the pdf as a text file and
then use for example the range-program written by Paul Nation for the analysis.
