I would really love to find the most frequent 1000 polish words with some simple sentences given them context. However, I have not been able. It does not look like that Polish is a hot language. Ah...

There are some monolingual Polish frequency lists at Wiktionary, and if you're good at copy and paste, you could build your own English-Polish mini dictionary using one of the following billingal word lists:
1. Wiktionary (Matthias Buchmeier)
2. HLT Budapest

I forgot to mention that you can search Glosbe for example sentences.

Once you've got your words, you can try finding them in the National Corpus of Polish. It's got very useful features like: extracting collocations, searching for various morphological forms of a given word or listing a word's frequencies to mention a few (as far as I know the search engines' interface is only in Polish).
EDIT: Here are some frequency lists of Polish lexems:
Wydawnictwo Naukowe PWN SA (200 lexems)
Słownik frekwencyjny języka polskiego V.05.2011 - 11,7 MB (pdf). -- Frequency Dictionary of the Polish Language by Jerzy Kazojć, basically this is a list of words and their frequencies made on the basis of 110093213 words (according to the website).
If you want to download it click: "Pobierz plik słownik".
Polski - Najpopularniesze słowa 1-1000 wersja Jerzego Kazojcia -- looks like an extract of the dictionary given above.
