When I first moved to Spain I used to occasionally scold my Catalan-speaking then-boyfriend for needlessly yelling at his parents, when he was just speaking normally. It can take a bit of getting used to, especially for those of us who are used to softer-sounding languages... I took a bit of convincing back then :-) Now, when I hear people comment about what Italian sounds like to them ("people" being those who don't understand why I love it so much), they're pointing out things that wouldn't occur to me at all, because I'm used to them from Spanish and Catalan (and now Italian). In fact I sometimes miss those things a bit...
So as to not go completely off topic (I've already posted though) - Icelandic's pretty cute, though it sounds like they're speaking Norwegian backwards and there's the occasional case of unintentional hilarity when something they say is recognizable enough to sound like the height of Norwegian parody. Someone I know was telling me that he had watched a snippet of an Icelandic TV series where someone was on a bridge threatening to kill herself, and all he could do was laugh because the words she was using in her threats to jump just sounded ridiculous.

In terms of sound, French.
In terms of structure, Ancient Greek.
Of course, those are only from the languages I know; I can't judge those I haven't had much exposure to.

In general Polish sounds very beautiful to Russian ears. My list:
Italian, Spanish, French, high-German, Brazilian Portuguese, Polish

Brazilian Portuguese sounds absolutely amazing to me. I started with the goal of European Portuguese, but fell in love with the language after listening to Brazilian! After that I quickly forgot about European PT. I also love the sound of Japanese.

In terms of sounds, my favourite Romance language is Italian, followed by Portuguese. I like both the European and
Brazilian varieties. I am attracted by the musicality of Swedish and Norwegian. And I love the look of the nastaliq
script of Persian and Urdu, it's really graceful. And Persian sounds really cute too.
