I've been searching all over with no luck for a reliable book on the 5,000 most frequent
words in Italian. Would anybody know of a good one? Grazie!

There's also:
-"Frequency Dictionary of Italian Words" by A. Juilland and V. Traversa
-"Italian Key Words: The Basic 2000 Word Vocabulary" (obviously only 2,000)
There was also a 5,000 word list posted here:

..but i think it was pulled from Gutenberg texts so might not be up to date.
There's also the "Lessico di frequenza dell’italiano parlato", which you can access here.

Wiktionary also contains frequency lists of several languages.
