Try RTVE: RTVE Radio de España Radio Nacional de España is the "BBC" of the Spanish speaking world with good, high quality programs on many channels. There's something to appeal to everyone.

Thanks all for this great list of URLs. Here are some additions (hope I'm not repeating what you have already listed):
Destinos - I know that this series is really cheesy, but it is so easy to watch these streaming videos. So, it is a more painless way of studying than going over conjugation lessons. You can turn the subtitles on and off. And you can get the workbooks quite cheaply from used bookstores online (which is what I did).
123TeachMe - This is a site that contains rankings of language schools around the world. The URL that I have given here gives you the Quito rankings but you can change that. I went to a language school in Quito for a couple of weeks last year - and found these rankings useful.
Edufone - More free podcasts.
CVC readings - a bunch of readings - mostly excerpts from books - that an intermediate student could read. (Would be nice if there were some ebook suggestions for relatively simple Spanish books.)

Here's another resource for real stuff for studying. A lot of it is older or "weirder" stuff, for example, I enjoy sewing and crafty stuff so this really rocks for me. Maybe you'll find some good stuff, too. (I think most of them are PDF's.)

This is my current favorite. I began using it last week and it is blasting my vocabulary intake/comprehension again.
This is good for all languages, not just Spanish. The link above is an explanation with a link to the actual site and instructions on how to use it. It took me maybe 30 minutes the first time to figure it all out and be up and running.

I have been trying to find a very unusual resource. I need to practice speaking, but my schedule is such that its very difficult to arrange a language exchange that is not text based. I think it would be great to find a resource that was similar to lang-8.com that lets you submit audio of you speaking and they would correct it.
Is there such a thing or something like it. Or if not, is there maybe some work around that I could use? Any ideas?

Well you can upload your recording somewhere, and ask people here or on lang-8 to comment on it.
I used kiwi6 which seems fine but there must be loads of others. Lots of people seem to use Audioboo, but I don't like it because you can't download, you have to listen to the stream.
