What exactly is the differnce between desto und umso?
I understand, that they just replace a wenn/dann construction.
But is umso the same thing as desto?
-Je besser man isst, umso wird man gesunder.-
Deesto could have been placed here too?

I think they're pretty much interchangeable, but they use a different word order from a dann clause.
Je besser man isst, desto/umso gesünder wird man.
To me, umso sounds like normal spoken language and desto sounds like written register or sayings/aphorisms.
