Not just an Assimil question but...
I find that I am able to listen or read at different times, examples being:
while out walking I can listen to many Assimil dialogs
other times, in between activities, I'll have time to read the book which I leave lying
around the home available.
Do I really have to listen to the audio and read the text at the exact same time?
It seems annoying to have to do this probably owing to the fact that I read much faster
than I can listen.

Agreed, it's frustating to read slower than you're used to (not that I'd call Assimil "real" LR).
My only solution to this is adjust the audio (some media players have several options - x0.5, x1.5, x2 etc.).

I am not sure I totally understand your question, but I think you are asking if you can do the listening part at a different time from the reading part. If so, I have a friend who does that and seems to be doing just fine.

Yes, exactly. I have plenty of time to listen to the dialogs repeatedly but when I get
home I just want to read the book and figure out what I don't understand.
I'm driven most by my own curiosity and structuring things too much seems to ruin that.
Yet I worry about getting sloppy.

Interesting topic. I think I will try it out.
I read fast and sometimes it's frustating to wait for the voice to catch up.
And this way to do it make it more flexible to study.
