I use a lot of course material, but I also use supplemental materials. One might fit your needs, so I just thought I'd throw it out there. I find online discussion forums on a subject that interests me, in my target language.
So, for example, I love horses. I often read a French discussion forum about horses.
The advantages are: first, you're using material that interests you, and second, people tend to post on message boards in "easier" language, so it's less challenging than many books.

There are resources that use more interesting content. I learned Mandarin through ChinesePod, with dialogues about ninja assassinations, mobsters, Godzilla and zombies, as well as more mundane but still fun things like Tai Chi and catfights on the bus. For Spanish I'm now using LoMasTV, which uses actual clips from telenovelas, interviews, documentaries as well as lots of music videos. I'm learning Spanish from Shakira!

Both CPod and Yabla (the company behind LoMasTV) have other languages, though probably with smaller budgets and less material than their flagships. For most commonly studied languages there should be resources that have engaging content. I can't stand stuff like Teach Yourself or Pimsleur, myself.
