When I did Spanish at college my Tutor talked about the different languages in Spain ie Castillian, Catalan
and Basque. She said that in the south of Spain ie Costs del Sol, she said that the accent is similar to a Latin
American accent.
I'm just asking because I found an online course that seems to focus on a south american conversational
style of vocab. If I did that (I'm aware that a Colombian accent will be different to a Argentine accent) would
that help if I wanted to speak the style of Spanish that is spoken in like Malaga or Granada is the holiday
places?

I don't think so.
Canary Islands Spanish sounds like Venezuelan Spanish,
but Andalusian Spanish does not sound like Latin American Spanish, it sounds Andalusian ;) And there are so many variants (even dialects) of Andalusian Spanish.
The dialects/accents of Málaga and Granada couldn't be further apart.
If you want to ''learn'' Andalusian Spanish, I recommend that you opt for the educated Seville accent, which seems to have the most prestige of all Andalusian accents/dialects.
On Andalusian regional TV, the newscasters avoid the Andalusian accents like crazy, they all seem to copy the Castillian pronunciation/usage.

Costa del Sol is the region of ''Ceceo'' (Where S is pronounced like TH in English THink; this pronunciation does not exist in Latin American Spanish).

One of the frequently asked questions of language learners is about accents. World languages like French, Spanish, English and Portuguese have many dialects, versions and/or accents. You can't learn them all, nor are there resources for them all or even a few. If you want to learn a regional variation of a language you must learn the standard first- or at least one of the biggest standards, then learn the dialect, accent or regional variant through exposure and individual research into the differences in vocabulary and pronunciation- on your own
Latin American Spanish has more similarities to Andalusian Spanish than Castillian Spanish because many of the early settlers in Latin America were from Southern Spain and were, as a consequence, the largest influence on the language. Though there are some similarities, it is not equivalent to the Spanish spoken in Andalusia. There are differences. Over 500 years that is to be expected. Still, there are many Latin American immigrants in Spain and they have few problems due to language in understanding and being understood.
Bottom line, don't worry about what version of Spanish you learn. Just learn Spanish. You can always adjust your accent and vocabulary later. Spanish is Spanish, though like British and American English, there are some vocabulary and usage differences that we are familiar with, as native speakers. Learn the basics of Spanish and its grammar. Listen to Málaga or Sevilla radio or speak to people from Andalusia online to familiarize yourself with how Spanish is spoken in the region and take note of the differences.
