I think we may be in violent agreement here (I was only considering the use of Assimil by itself). FWIW, my standard advice would include supplementing Assimil or any other course with full speed audio (radio, tv, etc.) more or less from the start, and only using "instructional speed" materials as necessary until reaching an independent stage.

I used Assimil Finnish when I could write fluently but not speak. Great stuff for shadowing.
I've also used Assimil Portuguese for Spanish speakers, though my Portuguese is better than my Spanish :D I think for experienced learners not knowing the base language of your Assimil should be ok :)
