At this stage, I'm only relearning characters that I learned several years ago. The trouble is that the first time around I studied traditional characters, so actually I learned 並 [bìng] instead of 并. So that's why I didn't recognise it. 井 was the closest character I recognised. Yes, you're right, characters are made up of parts, and that fact should be part of anyone's memorisation strategy. But it's not the only tool in the toolkit---there's not just one "right" way to learn characters! In fact, at the end of the day, any strategy that works for any given character is "right", whether it's decomposing the character into its constituent parts, making pictures out of them, writing them out over and over again, comparing them to similar characters, or any other memorisation trick.
