I am having a really difficult time gripping the conjugation of verbs. Does anyone have
any good sites or resources to grasp the general conjugation of verbs and adjectives ?

Just learn it on a case by case basis. You will learn it naturally this way. Having said that, learning the conjugations of 하다 will take you a long way as it can be combined with nouns to make verbs eg. 시작하다 to start, 공부하다 to study, 사랑하다 to love etc...

"500 Korean Verbs" by Bryan Park, might be helpful for you. I think the best thing about this book is that it has 1000 audio sentences with it!

Elementary Korean made it really easy for me to learn the conjugations, though I don't know if you want to spend 40-60 bucks for one chapter of the book.

Here is a chart that lists 8 irregular cases based on how the stem ends. It's important to remember that not all verbals ending this way are irregular.

Case: ㄷ Irregulars
Rule: ㄷ before a vowel becomes ㄹ.
Example: 듣다 > 들어요
Example verbals: 걷다, 묻다
Case: ㄹ Irregulars
Rule: All verbals ending in ㄹ. Drop ㄹ before (으)ㄴ ,(으)ㅂ, (으)ㅅ, and (으)ㄹ.
Example: 살다 > 삽시다
Example verbals: 걸다, 깅다, 들다
Case: ㅂ Irregulars
Rule: ㅂ before a vowel becomes 우.

Example verbals: 가깝다, 귀엽다
Case: ㅅ Irregulars
Rule: Drop ㅅ before a vowel.

Rule: All verbals ending in ㅡ. Before ㅗ/ㅏ ㅡ becomes ㅏ. All others become ㅓ.
Example: 앞으다 > 아파요
Example verbals: 고프다,따르다

Rule: 르 before 아/어 becomes ㄹ라/ㄹ러.
르 after ㅏ/ㅗ becomes ㄹ라. All others become ㄹ러.
Example: 빠르다 > 빨라요
Example verbals: 고르다, 다르다
Case: ㅎ Irregulars
Rule: Drop ㅎ before 아/어 and ㅏ/ㅓ become ㅐ.
Example: 빨갛다 > 빻개요
Example verbals: 까맣다, 노랗다
Case: 러 Irregulars
Rule: 어 before 아/어 becomes 러.

"Korean Grammar for International Learners" has a really good chapter on the conjugation of irregular verbs. It took me just under an hour to learn.
"Korean Grammar in Use" is not bad and it goes into more detail about it but I found the explanation in International Learners book to be easier to understand.

I just learned the basic -아/-어/-여요 depending on the final vowel of the verb.
For the irregular verbs I'm learning case by case because some verbs look like irregular
but really aren't(such as 받다(to receive) => 받아요).
