Different courses have varying amounts of their audio in the target language (L2). I'd class the ones I've used so far as follows,
Entirely in target language
- Assimil
- Linguaphone Complete Courses. (I'm not sure about the very latest French and Spanish)
- Hugo in 3 months series
- Living Language Complete series.
- Living French/German/Italian.
Adequate mix of target and native
- Colloquial series. (This is dependant on the specific course.)
- Teach Yourself Complete series. (This is also dependant on the specific course.)
- Linguaphone PDQ (Bordering on poor but it's close to an all audio course.)
Poor use of target language
- Teach Yourself Perfect Your French\Spanish. (There's way too much English on the audio)
Note: This list excludes all audio courses which need native language instruction.
How would you rank the courses you've used ?

I have the Living Language Hindi Complete, and it sounds like it should be wonderful with 6 CD's of audio. However, the audio simply consists of every Hindi word in the books read. Now, imagine someone reading verb and adjective tables out, without any explanation, as well as the random Hindi words used in explanations and you'll get the idea.
For Hindi, I'd rather stick with the two CD's used in Teach Yourself Hindi (which is pretty much just the chapter dialogues). Teach Yourself Beginner's Hindi has a lot of English in the audio, but again, this actually helps make the audio effective.
