I am at B2 level in Italian and since this is my first Romance language and I want to
learn (or at least be familiar with) the rest, could someone suggest the order in which I
should learn them.

Here's what I plan to do:

Italian > French > Portuguese > Spanish

I am a student of Linguistics and I am more interested in studying the language rather
than learning any of them for communicative purposes.

Thanks

Indeed, however, I do not wish to learn Romanian in the near future and would like to
concentrate on the languages I mentioned in my first post.

You mentioned that you don't want to learn most of these languages, just study them. From my understanding,
Romanian is unique for a Romance language in its grammatical structure.

If you just want to study them I would do

Italian>French>Spanish>Portuguese

Mainly because French is most similar to Italian, and a good transition into Spanish.
And since Portuguese and Spanish are very similar it makes sense to put them together.

Here's a video by Dr. Arguelles that touches on this question. Granted, he's talking about Spanish->French->Italian->German, but you might find some guidance there.

Something like Occitan might be neat to look into.
