The approach of the two courses is completely different.

Living Language takes the standard textbook approach of a grammar point + vocab list each lesson, and a dialogue to illustrate the grammar and vocab.

Assimil tries to minimize the technical stuff and memorization, so you just listen to the lesson while referring to the English translation until you find you can understand the recording on its own.

They're both excellent for Japanese, but since you say you're burnt out on intensive learning, and are mainly interested in conversational proficiency, I'd highly recommend Assimil. It's designed for conversation, and it's designed to be relatively effortless. You can spend just 15 minutes a day on it without any outside work (memorizing vocab lists, etc.) Japanesepod101.com might be a fun tool to use in conjunction with that - they're also conversation-focused, and teach a lot of slangy stuff, etc.

I don't know why, but Japanese With Ease is split into two volumes rather than the
second book being a true advanced level book like the "Using X" series. The two volumes
bring you to the same sort of level in the language as would a normal one volume With
Ease book in another language giving a total of 99 lessons.

It seems a bit odd to me that Assimil did this as you effectively need to pay twice as
much to get the same amount of content as you would in their normal With Ease courses.
