Disclaimer: I haven't studied Russian myself. However, besides the Princeton course, what I hear people raving about the most is the Penguin Russian course.

I own pretty much every Russian grammar/textbook that exists and I would say that for you as a beginner, and assuming you want to spend as little as possible and get the most books, the following would be your best bets in terms of usefulness, price and overall value. They are also typically found in American book shops. In no particular order:
New Penguin Russian Course
Russian for Beginners
Complete Russian (cheaper version is available without the audio)
Russian: A Self Teaching Guide
Russian Dictionary: Words and Expressions
Schaum's Russian Grammar
Berlitz Essential Russian
Everything Learning Russian
I would stay away from Russian for Dummies as it does not use the Cyrillic alphabet.
This one is expensive, but perhaps you could find a used copy:
Russian Grammar in Illustrations

"Russian Grammar in Illustrations" looks great - thanks for the tip (I'm a sucker for fun pictures). I've already ordered a copy (new 2006 edition, £16). :)

I think there are a lot of books you don't really need, and won't end up helping you an
awful lot. I would recommend getting:
A small summary of Russian grammar (barrons do a good one, forget the name)
Penguin Russian Course (very good intro to pronunciation, if I remember correctly)
A couple of courses with beginners dialogues
The Modern Russian course with it's audio (excellent grammar explanations and drills)
A few bilingual novels with audiobooks. Search the forum for these.
If you want a dictionary, I suggest a 'learners' dictionary, or else a collins gem etc.
If you can't find a word there, you probably shouldn't bother with it as a beginner.
I have a few heavy duty grammer manuals, vocab books, 'Using Russian', big
dictionaries, conjugation books, but I haven't used them.
The Russian DLI course looks useful too. There are links in the forum in a topic called
'DLI links', I think.
If you want to get better at reading newspapers, check out http://gloss.dliflc.edu/
That should keep you busy for a while :-).
