For me, this is the most "formal" college-like course:

Here is the official website for the series: http://www.bcsgrammarandtextbook.org/ The books are sometimes hard to get but for me are the only thing I'd use. Hope that helps :) One more thing that I consider better than any course is the blog by a Croatian that lives in Zagreb about learning colloquial Croatian. What's good about the site is it covers topics by necessity as well as in a manner that is less technical.
