If you have netflix instantly I would recommend As Far as My Feet Will Carry Me it's an excellent Russian-German language movie.

For Polish, I'd echo the poster who mentioned Dekalog. This series of films is superb, albeit a bit grim!

For Russian, you have so many choices, but personally I'm particularly interested in the Brezhnev "Period of Stagnation" of the 1970s, so I love Moscow Doesn't Believe in Tears, Irony of Fate, and Office Romance.

For German, you can't go far wrong with the recent hit Das Leben der Anderen, which is brilliant.

Japan also produces brilliant films pretty much every year, but I particularly recommend ご法度 (Gohatto), which is nice and controversial, or Water Boys and Swing Girls directed by Shinobu Yaguchi, which are not even slightly controversial but great fun.

For Georgian, my favorites so far have been Sami Sakhli (Three Houses), Kuchis Dgheeebi (Street Days), and Ratz Otari Tsavida (Since Otar Left), although the latter is not a Georgian production and not wholly in Georgian.

I also second the Romanian film 4 Months, 3 Weeks and 2 Days - amazing!

Growing up on Bollywood movies, I have found a select few that don't really fall under
the stereotypical "bollywood low quality romantic musical" banner.

These include:

Taare Zameen Par
Lagaan(by far my favourite)
3 Idiots
Rang de Basanthi*
Khosla ka Ghosla

I would also recommend:

Hera Pheri (the humor may not translate well though)
Swades*
Malamal weekly (again a comedy)
Anything starring Amir Khan, Amitabh Bachan, and to a lesser extent Shah Rukh Khan.

Rang de Basanthi and Swades are somewhat patriotic movies, but unlike most patriotic
films, are well made and although hopeful about the future, are critical of India's
flaws as opposed to blindly praising the nation.

For French films, I highly recommend La Haine, a gritty urban drama, filmed entirely in
black and white, a must see in my opinion. It also has a huge amount of colloquial
dialogue, and as such it can be hard to listen to at times.

In Spanish, a fantastic film by the name of El Secreto de Sus Ojos, from Argentina has
received rave reviews since its release in 2009. A great thriller, with an amazing plot.

Another film I throughly enjoyed, was a Greek film called Dogtooth. Definitely the
strangest film I have ever seen in my life, it can be interpreted in a number of
different ways. Also a must see, just to see how weird it is.

There's so much out there, but here are some of my favorite directors/films:

Wong Kar-Wai is an incredible director. Wonderful cinematography courtesy of Christopher Doyle, and stories of unrequited love, often told through dream-like voice overs. Most of his stuff is in Cantonese, with 2046 having some Mandarin and Japanese too.

Someone already mentioned Takeshi Kitano. He's by far one of my favorites as is his film Hana-bi. His style is very unique, often characterized by deadpan humor, outbursts of violence, the beautiful music of Jo Hisaishi, and a camera that doesn't like to move.

Krzysztof Kieslowski's "three colors" trilogy is a must see. Very powerful films with some truly mind-blowing visuals. Blue and Red are in French; White features a few different languages.

Takashi Miike is a very prolific director known for creating taboo-bashing films and using twisted humor. And with stuff like Gozu and Visitor Q, he does just that. But he is capable of much more than just disturbing the audience. Not for everyone, but he never fails to interest me. I'd first recommended Audition.

Michael Haneke is best known for Funny Games and perhaps his latest, Das weiße Band. His films always have something significant to say, and I think he has a knack for disturbing the hell out of viewers. Long takes and a static camera are some trademarks, meaning some people might be bored out of their minds! His films up to and including Funny Games (and his latest) are in German - the others are in French.

When it comes to Bollywood, Kal Ho Naa Ho, Dil Chahta Hai, Khalnayak, Jaane Tu... Ya Jaane Na, and the ones I've seen mentioned by spamkingdom are a few of my favorites. Pinjar too is very well done and I'd recommend it. Dev D is another great one and fairly unique for a Bollywood.

Others...

Stalker (in Russian) - Slow, but truly amazing to look at and it makes you think.
Irreversible (in French) - Quite disturbing if that's where your interests lie (mine certainly do!)
Amores Perros (in Spanish) - Pretty well known already I think.
Aguirre: The Wrath of God (in German)
Hard Boiled (in Cantonese) - My favorite action movie and one of my favorites period. I'm obsessed with this movie...

And I'll third that Romanian film! I'm also a big fan of Italian horror and gialli, but they were usually in English, so I guess they don't fit here! I'm missing stuff, but this should be good enough for now.
