I remember in my grammar book the construction of pronomialising "preposition + iets" and
"preposition + niets" into "ergens + preposition" and "nergens + preposition",
respectively, i.e. "Reis je toch met niets?" into, "Reis je nergens toch mee?" and
correspondingly, "over (n)iets" -> "(n)ergens over", "door (n)iets" -> "(n)ergens door",
"voor (n)iets" -> "(n)ergens voor", etc. However, not frequently do I see the "(n)ergens
+ preposition", is there a certain nuance in this construction, or is there a different
reason why this is not used so often?

The construction would be "Reis je nergens mee?" Toch sounds very out of context in your
sentence.
I use that construction all the time, and I would consider the phrasing with "met niets"
to be at least completely non-idiomatic, if not outright wrong.
But your example would be more accurately translated as "Reis je zonder bagage?" or
something to that effect.
Dat gaat nergens over! "that's total nonsense/waste of time" (about a discussion), I use
this expression all the time...
