What is the difference between hx and r in Esperanto? I hear a slight difference when I listen to audio files, but I can't figure out how to make the different sounds.

hx, which should be written as h with a circonflex on it, is pronounced as ch in Scottish loch, r should be rolled like in Italian but I can imagine that it can be difficult for native speakers of some language to make the difference. E.g. French r is often uvular so it can give to a lot of listeners the impression of a voiced ch in loch.
