I am afraid I am not easily impressed, he would have to speak more languages than me, and better, to impress me. On the other hand I adore Italian and Russian....

The languages I used for conversation were Spanish, and English. One sentence in Arabic.
In my experience it did work for the first impression.(Foot in the door.) It is more difficult to maintain interest afterward. It felt like a novelty act and sometimes the charm wears off.
This was upon women who had an interest in languages or mystery of where the person came from. A thread about five years ago, I wrote down one reason to learn languages was to flirt with girls. Luckily I truly like languages.

Pros: Meet other women and explore different horizons. Gain precious experience for socializing and communication. Additional skills like conditioning of rejection does get easier.

Cons: Heartache hurts no matter what language. (Sometimes unsaid.) If the relationship does not succeed, then interest in the language might not continue. Rejection is still disappointing.

Do not forget the most important is not what you or she says, but what both you do. Pay attention to mannerisms, sensitivities and signals. Receptivity will vary depending on the person. Languages like people there is a variety that makes each expression unique.

Er. I mean, the entire idea defeats its purpose for me. Somebody whose main motivation to learn a language is to show off will not reach the level of proficiency that is needed to impress me.

Honestly, showing off is a large motivation for me in studying languages (even if I'm often just impressing myself). I think it can be quite a powerful motivator for many people.

Edited to add: The motivation of impressing people catches a lot of flak on these boards, but I honestly think it's a larger part of people's motivations than they would like to admit. Then again, IANAP(sychologist).

Well, it's not knowing a lot of languages what would impress a woman, but the way you use that knowledge.
I am sure it wouldn't be very romantic when some guy starts speaking all the languages he knows out of the blue just to impress her, women are NOT attracted to men trying to impress them.
