Good luck. The Spanish, French and Italian part is definitely doable. You have a challenge on your hands with the Arabic, though. I have thought about studying Arabic, but I am going to wait until I have 4-5 other (easier!) languages under my belt first.
I'll enjoying watching your progress - you certainly have a lot of motivation and incentive!

What a grand challenge! I'm sure everyone on the forum will wish you luck.
I would get off Rosetta Stone straight away, and work with the other resources you identify. For becoming confident in a language in a short period of time like 14 months, Assimil is your best bet; work with it straight away, then watch a lot of movies and TV. Fortunately, I believe that for all the three Romance languages, Assimil offers their advanced Using level.
Rosetta Stone will give you the illusion of progress, because as you get used to its repetitive exercises, you will knock off the vocabulary quickly. But that is only in a structured context. If you try and mobilise this vocabulary in the real world, you'll have trouble getting it out, because your mind won't have internalised the language in a way that allows you to manipulate it. All you know how to do is reproduce individual words when you see the pictures.
If you do have confidence in Rosetta Stone to teach you vocabulary, I would leave it til further along in the process, when you already kind of know the words but it's helpful to confirm and reinforce them.
You won't need a 3 months for Michel Thomas on French, you should be able to hoover it up in a month as a language grammar-survey (it is also not suitable for internalising a language). But the Michel Thomas courses are also excellent for Spanish and Italian. Why not work with them up front too (in parallel with Assimil - I think they should reinforce each other).
Everyone seems to have a down on Assimil Arabic; I've no idea about that. But there should be a Linguaphone course you can find which will offer equivalent regular exposure.
If you do have the freedom to spend 3 months in Egypt, why stop there? You can also spend a month each in France, Spain and Italy. Once you have enough knowledge to start basic conversations, nothing will serve you better than full immersion. Your challenge is actually your gateway to a year of adventure.

They have excellent full ones for Spanish and French, not so much for Italian. They're a kind of anti-Assimil.

Thank you. Ichiro. I am slowly finding that out about Rosetta Stone. I will however persist. Whilst not the most effective. I do enjoys it a tad, and if you enjoy it you retin it, but I will drop the amount of time i spend on it and replace it with Assimi.
MT French is more enjoyable than Italian so I am taking that in more and have just ordered Assmil in french to supplement.

4 languages in 14 months to B2 level (with writing around B1 perhaps) - what a great plan! What makes it even more fascinating is that you could earn yourself 1000 quid into the bargain too, this is what the character Alfie (from the movie of the same name) would call a "healthy interest in your work". I could learn from you here... ;)
French, Spanish and Italian are all closely related level 1 difficulty languages for native speakers of English; so I imagine, as already pointed out by several members, that Arabic is going to be the real deal-maker or deal-breaker. A heads up on this - you'll probably need to invest the same amount of time into Arabic as all the other 3 languages put together, maybe even more.
I think though, at 5 hours a day (6 days a week), it's definitely possible to bring all 4 languages up to B2 level in this time and win that pot. Best of luck in this and I look forward to hearing lots of progress!
