I think the Michel Thomas courses for Spanish/French/Italian can be of great use for you, just to begin building a grammar foundation. I can't speak for any Arabic sources, though. I would stick with Michel Thomas first, then Assimil. I might do another course concurrently for the Romance languages - maybe the Living Language Ultimate series, or TY or Colloquial. I think Assimil gives you a lot to chew on, and trying to do an hour or two of Assimil a day might break your head! Having another program to work concurrently could work in your favor, and it will also reinforce points and give more than one explanation for harder grammar points.

Let us not talk about how long I've been learning, you don't need the discouragement at this stage. But no one has ever offered to pay me £5,000.
I will say that I had been noodling around with Spanish for a while, and it's not until an (almost) monolingual Mexican friend actually came to stay, and I was forced to speak Spanish on a daily basis, that the language really clicked for me.
In that two weeks alone I made a massive step foward, maybe to the standard you're targetting. But I had been laying the groundwork for that standard for a long time.
At any rate, do consider immersion as part of your route to the goal.
I agree with you about Spanish, Italian and French all reinforcing one another. With the similiarities between them, while studying one the others will also be constantly with you.
