I've been learning Spanish for some time now and I'd like to move on to another language
before I start college in the late fall. The languages I'm most interested in are:
Arabic
French
German
Hebrew
Hindi
Indonesian/Malaysian
Russian
Turkish
I'm not entirely sure which to choice. I'd like to learn Afrikaans, Irish, and Swedish as
well. I want to learn a language to interact with those that I normally wouldn't have the
opportunity to, but South Africa, Ireland, and Sweden have huge amounts of English speakers,
so that definitely makes it less of a "priority".
I am interested in anthropology and the study of multiple cultures. I have an affinity for
the Middle East, South Asia, and Europe. I would like a language that would help me with job
prospects, in addition to Spanish, and one that I could use to travel to the nation(s) that
speaks it.

Because of your interest in the Middle East (well, you mentioned it first in a list of half the planet), I'd go with either Arabic or Turkish.
But... when you get to college, you're bound to meet people from all over the world. Why not wait until then? That might help you decide.
As far as job prospects go, do you know what you're going to major in? Another language by itself won't really help you with a job, but in combination with your studies, it could be of great help.

When people ask this question they normally already know the answer. But consider; you can learn them all, so just rank them in the order in which you would prefer to learn them and start on the first one.

Well, that would be possible to to with all the languages you mentioned, with the deplorable exception of Irish :-(

Depends on your situation (the "nobody else does it" part, not the "it's awesome" part). Hebrew is the most
common non-English language I encounter in person, and I live in the same country as the OP (it's a big country, I
know). It's really easy for me to forget how uncommon Hebrew is, statistically speaking.

I would say depending on your interests Arabic + French.
