I just ask people where they are from and if it is a French speaking nation, I continue
the conversation in French.
I never feel too confident in telling the difference between say a Belgian accent and a
Dutch one or the accent of someone from Togo vs Ghana so I don't just start speaking
French since I know I'm likely to be dissapointed.

I come across many Germans in the Scottish Highlands. Just yesterday I was out climbing and bumped into three separate German groups. I've never had any difficultly getting German people to speak their own language with me, particularly if you throw in a bit of humour and/or self-deprecation at the outset.

It's not that hard, you figure it out and then go from the point where it's the most
useful to use a certain language.
Swedes have never spoken to me in English and they've never had to. They could always
simply speak Swedish and so it's always been.
