I'm thinking about learning Japanese and Persian. My native language is Arabic and as you
can see I also speak English. I've already started learning Japanese using an English
textbook and I'm looking for an Arabic book for learning Persian.

Should I just focus on one than move on to the other? Also, should I use an English
textbook for Persian? Any advice or information would be very appreciated.

I think two languages at once is normal. I suggest the method, that one of the users here suggested here. The idea is that you study for 3-4 months only two languages - one that is in advanced level, one that is the beginning language. But since I suppose that You don't have an advanced language any other than English and I don't think that you will study it, because you already know it, I encourage you to study both Persian and Japanese. Since Your native is Arabic, then Persian will go quite faster for You because of the same alphabet and I assume that some vocabulary is quite similar too, although not really sure - I'm studying Arabic only and the only thing I know about Persian is the fact that it shares the same alphabet.

The problem is that I can't find Arabic textbook here in the U.S. So I'm just going to
continue with Japanese for now and by the time I get a vacation, I'll get a Persian
textbook.

Studing 2 languages is perfectly ok as long as they are not very close linguistically.I wouldn't study Italian and Spanish or Russian and Bulgarian at the same time.Mixing them up is very easy.
Why the arabic textbook?Your English seems more than enough to understand an English textbook.
