After having read a significant number of texts in Hebrew, I noticed something. As far as I know, you use "she" to say "that" in Hebrew ( like "Ani khoshev she..."- I think that... ) but I've also seen "ki" used for the same thing and I thought that "ki" meant "because". Is there a rule that says which word to use and when?

Let me solve you the problem like most Israelies kids do these days.
Modern Israeli speakers know just like you that "ki" can be used in two different ways. We had not been taught in school when to use "ki" as "that". You need to understand that Israelies acquire that particular knowledge by reading newspapers, books, etc.
However, a very good general rule is that "she" in 99% of situations will sound perfectly natural. Therefore i suggest you to use only "she" until you will get into native material and find out by yourself the delicate uses of "ki" as "that".

Actually I have been taught in school the ki means 'that' sometimes, while learning sentence structure.

ki as in because? You guys aught to use Hebrew script- your transliterations are so confusing - thought you guys were talking about she as in female 3rd person pronoun and I was like "what"?
