I am not sure where this ought to go so I have put it in general. The question/topic is when you write Japanese which writting system do you use?

A few! Hiragana and about 2000 Chinese characters normally, plus katakana occasionally. Also, some Latin abbreviations and Arabic numbers are used.

You use the Japanese writing system, which is the only writing system used to write Japanese.
The Japanese writing system has symbols that are variously classified as kanji (ideographic), hiragana or katakana (syllabic). Roman letters are occasionally used, typically for abbreviations, and Arabic (Indian) numerals are quite frequently used. But these are all pieces of the one modern Japanese writing system.

It is helpful to think of the three kinds of symbols as sort of like upper and lower case letters in English in the way that both are used in the same sentences and you need both to properly construct the language. After that it's probably best to ditch the analogy to avoid getting confused.
