Are there any universities in Europe (specifically France and Italy) that allow people
to take language courses, even though they are not matriculating university students?
I'm 24 years old and having a bit of a quarter-life crisis, I guess you might say. I
have yet to finish my degree but don't want to miss out on the opportunities to travel
during my 20's. By the time I go back to school and qualify for a study abroad program
(earliest would be in 2nd year) I will be 26. I don't want to wait that long to travel!
And also, I am not positive about what I want to study yet.
I just want to take some language courses alongside other university students rather
than at a language school. I want to have something as close to a study abroad
experience as I can!
Please someone help!

In Germany, many universities open up language courses to people who are just registered
as "listeners". I imagine it's similar in France and Italy.

In France, many universities allow you to follow courses as "auditeur libre" which means that you have to pay a small fee to attend the course, but you won't receive any credits or certificate for it and you probably won't be allowed to sit the exams either. Some also have language centers that offer courses that are open to the students as well as to the general public.

I'm attending a language course at my ex-university in the UK, and there are many other language centres affiliated to universities. The question is not "Are there any universities in Europe that allow people to take language course", but rather what type of course are you looking for, for which language and so on. Unfortunately, I can't give any specific info about France and Italy.
