My favorite is Nancy Ajram. She is Lebanese but sings in the Egyptian dialect. She's a
pop singer and her songs are really accessible and fun. Listen to "Ebn el geran" - so
cute!

Lately, I've been loving Tomorrow/Bokra, which involves several Arabic singers. I think it's a truly beautiful song.
I also like the song Khally Bokra Ahla by Shady Hamza and Yousra. It's the song used for the Coca-Cola commercials and I love the cheerfulness of it.
In general, some of my favorite singers are Amr Diab, Samira Said, Nassif Zeitoun, Majida El-Roumi, such as E'tazalt El Gharam, Asmaa Lmnawar, and several more.

There's a lot of great, catchy Arab pop music out there.
I'm not going to go listing individual songs, but here are some artists you might want to check out:
Amr Diab (عمرو دياب)
Elissa (إليسا)
Fairuz (فيروز)
Nancy Ajram (نانسي عجرم)
Nawal Al Zoghbi (نوال الزغبي)
Sherine (شيرين)
All of these singers have released albums within the past three years (most of them in 2010), the albums of which topped music charts all across the Arab world. So if you want to listen to what's "popular" among Arab youth, these would be good artists to start with.

I like Tamer Hosny and Fairuz, as well as Amr Diab and Latifa. But I don't know what they're saying yet. :P

There is a tonne of great Arab music out there. All the above are good (I admit, I love Nancy - she's one of my absolute favourites - start with Ah wa nos).
Check out too: Rashed Al Majed (faaaabulous), Mohammed Mounir (love his voice), Pascale Machaalani, Warda and Mohammed Abdou.
Most of all, though, you must get hold of Um Koulthoum...these will be very old recordings, not super hi fi, but the emotion...and if you have been to Egypt or read any cultural books/magazines, for sure you will have already heard of this magnificent singer.
Oh, if you are interested in rap there's a few of those bands too - MTM are a bit long in the tooth now but fun videos.

Myriam Fares is good too! Almost forgot her. She is Lebanese but sings mostly in
Egyptian too. Try Ha'aliq Rahtak.
