I've decided to take a break from french to start learning Russian. I still listen to french every day, so I don't forget what I've learned. I also listen to Russian as well. My first question is, is this a valid way to maintain more than one language? My other question is how much listening should I do a day to each?

If you can comfortly listen to native materials in French, I see no problem. But if you still struggle with learning materials, you will lose some French in the long run.
But what are you listening to in Russian? As a bloddy beginner there is only educational material you can use. And there is nothing to maintain, you have to learn everything from scratch, so I do not understand your first question completely.
When I listen to French, I need some minutes to dive in, so I think I would need portions of about at least 15 to 20 minutes. I like audiobooks, but news, movies and shows do the same job.

For me it is important to listen and read only interesting and useful materials in a target language so to retain it I
watch movies and video courses on interesting topics, listen to audio books, read books, internet pages and another
interesting materials etc.
I think that listen and reading something interesting while go to work or anywhere everyday is enough not only to
retain but also to improve a language.
