Sorry, but neither of those is calligraphy. They're both typeset styles or fonts. The so-called "fancy" one is a serif font (Ming/Song 明體/宋體), and the "plain" one is sans serif (Hei 黑體). It's like complaining that somebody typed in a "fancy" Times New Roman instead of the "plain" Arial.

You'll find that, just as in English (or any other language, I'm sure), serif fonts will pretty much always be used in books, while sans serif fonts are more suited to computer screens. Neither is "fancier" than the other, and you need to be familiar with both.

Another common font type is called Kai 楷, and it is a calligraphic style, unlike 明/宋 and 黑. It is intended to look like the regular written script (i.e., written with a brush).
