She only spoke English the whole time... Even so, by her description or lack thereof of her language ability, it seems she is a beginner in all but English in Chinese.

Not that I believe everything posted on the internet (including in large measure stuff I myself post), but here are some excerpts from her imdb.com biography:
As her family spoke Mandarin Chinese at home, she did not learn English until the age of 5.
Graduated from the University of Michigan at Ann Arbor with a degree in Asian languages and cultures.
Is fluent in Mandarin Chinese, English, Italian, Spanish and a little Japanese.
You can hear her speak Japanese on one of the Kill Bill movies - but that might represent nothing more than rote learning of specific lines. You can also readily see that she is wicked quick with a sword in the same movie, so if you meet her in real life and she tells you that she can speak "x" number of languages fluently, you may want to tread carefully in cross-examing her credentials.

imdb.com biographies are fan-written. They cannot be considered a reliable source for information if there are other, primary sources that contradict the statements made in it. They do not come from her; they come from other people misinterpreting her honesty as modesty.
