I'm surprised nobody has mentioned Warsaw Village Band yet. If you're into folk music check them out. It's like
Polish folk music given a modern/indie taste.

I love rock and some of the classics would have to be: Perfect, T.Love, Kult (and Kazik), Pidżama Porno (as well as Strachy na Lachy), all the projects of Maciek Meleńczuk.
Hope you'll have a goodtime listening to them, it's really good music :)

I have some Polish music if you would like it. Look up Mr. S at www.artificialbliss.com. If you don't want to buy his music I can upload it for you, but he's from the underground so you won't find it in stores.
The songs of his which feature Polish lyrics are usually DnB, lounge, and jazz. Or a combination thereof.

Well, I don't think Polish rock bands will be the best choice. Why don't you try some female singers like: Anna Maria Jopek or Maryla Rodowicz?

I second the Polish hip hop recommendation, if you're into that style of music. I've been interested in learning Polish for a while now and while I don't have the time to study it regularly, listening to rappers/rap groups like Molesta, Killaz Group, Płomien 81, Hemp Gru, Ramona 23, Trzeci Wymiar, Peja, etc. has helped me to get a good feel of the phonology and flow of Polish as well as learn vocabulary and rudimentary phrase structures. In my ears the language is phonetically acrobatic, strings of speech dancing and flowing off in interesting directions, a wonderfully musical language that lends itself very well to rap. You can check all of the above groups on Youtube. Most of all, you should sprawdź Molesta!

I just ran across this thread which has already collected some dust. The jazz guitarist Pat Metheny recorded an album in 2008 with the Polish singer Anna Maria Jopek, called "Upojenie". The style is not pure jazz but some kind of fusion. The song that sounds most like pop is "Tam, Gdzie Nie Siega Wzrok", but even this doesn't follow the simplistic pop song form. Highly recommendable stuff, even if you don't learn or know Polish.

Maybe of interest to any fans of Metheny: the classical guitarist Jason Vieaux made a solo album "Images of Metheny", which also contains some pieces from "Upojenie". Just in case you ever wondered how jazzy a classical guitar can sound.

I suggest Polish band Myslovitz. The vocalist sings very distinctly.
For example:
"Scenariusz dla moich sąsiadów"
"Dla Ciebie"
