After using Rosetta Stone for a while, I could actually think in Dutch (well, at least the words I knew. If there was a
word i didn't know, it would come out in English). I didn't even realise I was doing it until I wondered just how
effective it had been!

Also, obviously, to complete the Assimil course entirely it takes roughly 5-6 months, I am visiting France in a couple of months and was wondering whether I would be at a basic level after 2 months of study using Assimil. Would Assimil be an appropriate course for attaining a basic, working knowledge of the language in a relatively short period of time, or are the dialogues a bit too "random" for that?

So far as immersion goes. You seem to have your own definition of language immersion. That is fine so long as you make it clear what you mean.

I thought immersion is when you use the language as though you were a native speaker, that's to say, when it's not the language what you care about. For example, when you attend to maths classes in your target language because of the maths, or when you try to pull at a nightclub in your target language, because of the women. Obviously, this is not the case of Assimil.

It's not that I care about the name, but I think it is important to notice that you are talking of two different activities: massive, indiscriminate input (what I call immersion) and working with the language, for example with shadowing, L-R, flashcards, Assimil, and so on.
