I came across the following in a book called French Grammar Drills by Eliane Kurbegov:

"Your (ton, ta, tes) and his/her (son, sa, ses) are used in the same manner as my (mon, ma, mes). However, note that, his and her, are translated as son, sa, ses depending on the gender of the noun that follows (not the possessor).

son père (m) - his father
son père (f) - her father

sa mère (m) - his mother
sa mère (f) - her mother

ses parents (mpl) - his parents
ses parents (fpl) - her parents"

I don't see how this is any different to the use of 'your' or 'my'.
Can anyone explain?

Yes, it's the same. The author is trying to show that in English you use his/her depending on whether the owner is a male or female and that it's the ONLY time you do that. My, your, our, and their don't change based on the gender of the owner. But French doesn't have different forms of the third person singular possessive adjective based on the gender of the owner, son, sa, ses = his or her.
